American Kolache Opening Soon in Ashburn: New Czech‑Style Pastry Shop

A doughy delight has just rolled into our community, and it’s not your average baked good. If you’ve been craving something that’s equal parts comfort food and conversation starter, get ready: American Kolache is almost here, and it’s about to make mornings in Ashburn a lot more interesting.

The Burn recently revealed that St. Louis–based American Kolache, sometimes called St. Louis Kolache, is opening its first Virginia location in our very own Cameron Chase Village Center, next to the Ashburn Ice House. Construction on the 1,400‑square‑foot space is nearly complete, and the team is aiming for a mid‑November grand opening. A fresh sign already hangs over the storefront, turning heads and sparking whispers that something delicious is coming.

What’s a kolache, anyway?

Originating in the Czech Republic and Slovakia, kolaches are yeast‑dough buns filled with sweet or savory ingredients. They’ve been a staple in Central Europe for centuries and have gained devoted followings in places like Texas and Missouri. Now, thanks to local owners Jing and Alex Stimpson, we’ll be the first to enjoy them fresh every morning right here in Northern Virginia.

The menu: from breakfast to dessert

The upcoming Ashburn shop plans to serve kolaches for breakfast and lunch only, doors open at 6 a.m. and close by 2 p.m. daily. On the savory side, you can expect breakfast fillings like eggs, sausage, ham, cheese and gravy. For lunch, options get more playful: think Mac & Cheese & Bacon and Sloppy Joe kolaches. If sweets are your weakness, you’re in luck, Apple Pie, Double Chocolate Brownie and Raspberry Cream Cheese kolaches are on the roster as well. In other words, there’s a kolache for every craving.

If all goes according to plan, American Kolache will open its doors in just a few weeks. I recommend marking your calendar now.
